It’s Pimm’s O’Clock! Try this classic summer recipe with a twist from Dominic Franks, chef and food blogger at Belleau Kitchen, using the new Pimm’s Strawberry with a Hint of Mint.
INGREDIENTS
This recipe is for a 1 litre pudding basin, serves 6
A few slices of thickly cut white bread
200g fresh strawberries
200 mixed summer berries such as blackberries and raspberries
75ml Pimm’s Strawberry with a Hint of Mint
2 or 3 tablespoons golden caster sugar – depending on taste
2 teaspoon red wine vinegar
Fresh mint leaves
METHOD
- Grease a pudding basin with a little butter then take the slices of bread and patchwork them into the basin. Cut a circle of bread for the base and triangles for the sides, fitting in pieces where there are patches, leaving enough bread for a lid
- Add the fruit, Pimm’s, sugar and vinegar to a pan and gently heat for a few minutes until the sugar dissolves, making sure the fruit doesn’t lose its texture
- Pour the fruit into the pudding, saving a little back, and place the bread for the lid on top
- Spoon a little more of the liquid on top, ensuring it runs down the side to cover all of the bread
- Place a small plate on top so it touches the pudding, then top with something heavy, such as a couple of tins, and pop it in the fridge for at least 24 hours
- Once you’re ready to serve, place your serving plate on top of the pudding basin and flip the pudding upside down, tapping it on top to release
- Drizzle the pudding with the remaining juices and serve with lashings of cream
